Ingredients and Spices to Make for Peruvian Ceviche:
- 250 grams of levrick
- 8 lemon
- 8 coriander sticks
- 1 clove garlic
- 5 mm ginger
- 100 gm sweet potato
- 1 red onion
- 2 teaspoons yellow chili paste
Instructions for making a Peruvian ceviche
- Chop about half of the cilantro, garlic, and ginger. Put in a bowl.

- Squeeze 8 lemons and mix them in a bowl with the coriander, garlic and ginger. Leave it on for 5-10 minutes.

- Cut sweet potatoes into cubes. Boil until tender, but not too soft. Cool in cold water.

- Cut the red onion in half. Cut into two rings. Place the slides in a bowl of cold water for 5 minutes. (This helps remove the strong flavor of the raw onions)

- Strain the marinade through a sieve to remove the coriander, garlic and ginger. Add yellow pepper and a pinch of salt to taste.
- Cut the bass into pieces about 2x1 cm. Add a pinch of salt and mix.

- Mix the marinade with the sea bass. Leave it on for 10-15 minutes. Citric acid "cooks" the fish. Meanwhile, take the rest of the coriander leaves.

- Once the fish is "cooked", mix the sweet potatoes, cilantro, and onions with the fish. Feet and light immediately. Optional: garnish with toasted corn kernels.
