- 2 kg fresh mussels
- 500 ml fish broth
- 500 ml white wine
- 500 ml oyster nectar
- 2 sprigs lemon mint
- 2 stalks lemongrass
- 2 teaspoons saffron
- 2 cups apple chips
- 5 sprigs thyme
- 1 liter heavy cream
- Two pieces of pork
- 125 ml mayonnaise
- 1 carrot
- 1 bulb
- 1 celery stalk
- 1 small Yukon gold potato (also known as gold nugget)
- 2 pickled cucumbers
Instructions for making smoked mussel soup with saffron
- Pour the white wine, lemon balm, thyme and lemongrass into a saucepan and reduce by half.
- Place the saffron in a bowl of boiling water and set aside.
- Cook 10-15 mussels in a pan. To do this, put the pieces of wood on a dry frying pan and raise it over the fire. Wrap the molds in aluminum foil, poke a few holes in them, and place them in a skillet with wood chips. Cover and steam for 5-10 minutes.
- When the shell opens, take the meat out, put it in a blender with clam nectar and beat it up!
