I've been making this for so long, I can't remember where the original recipe came from, maybe my mom lol but I do know that I started adding potatoes, thyme and sesame seeds at will and haven't stopped since.

Ingredients and seasonings to make a simple classic chicken pot pie

  1. 1 1/2 pounds boneless, skinless, raw chicken breast, cut into 3/4-inch cubes
  2. 1 1/2 cups potatoes, cut into 1/2-inch slices
  3. 1 cup 1/4" carrot slices
  4. 1 cup frozen peas
  5. 1/3 cup + 2 teaspoons unsalted butter
  6. 1/3 cup chopped yellow onion
  7. 1/3 cup all-purpose flour
  8. 1 teaspoon of sea salt
  9. 1/4 teaspoon black pepper
  10. 1/4 teaspoon sesame seeds
  11. 1/4 teaspoon dried thyme
  12. 1 1/2 cups plain chicken stock
  13. 2/3 cup milk (1%)
  14. 2 frozen pie crusts (9 inches)

Steps to make a simple classic chicken pot pie

  1. Combine the raw shredded chicken, carrots, peas, and potatoes in a medium saucepan. Add enough water to cover and a little salt and pepper. Bring to a boil, reduce heat and simmer for 10 to 15 minutes or until carrots and potatoes are tender. After boiling, put it on a plate and let it stand.
  2. Preheat oven to 425 degrees Fahrenheit. Grease a 2-quart baking dish with 2 teaspoons of butter. Open the baking sheet and press into the plate, shaping and pressing from the center out and extending the edges of the plate to the top edge. If you have tears, just squeeze them together. Report it.
  3. In the same pan used for the chicken mixture, melt the butter over medium heat. When melted, add the onion and cook until translucent, stirring frequently. About 3 minutes. For the dressing, whisk together the flour, salt, pepper, sesame seeds and thyme. Cook until the roux is golden brown, stirring frequently. About 2 more minutes.
  4. Add the chicken broth and milk in small portions, stirring constantly so that there are no lumps or sticking to the bottom. Bring to a boil, stirring constantly. About 5 minutes. Turn off the fire. Gently stir the chicken and vegetable mixture into the pan.
  5. Pour the filling on the bottom of the cake, make it smooth. Open the top crust and add, pinching to seal the edges (use a fork for a better seal). At the top, make several openings for steam ventilation. Place in the oven and bake for 30 to 35 minutes or until the top is golden brown.
  6. Remove from the oven and, if necessary, brush the top with an additional spoonful of butter to melt the coating. Let cool for 10 minutes, remove and enjoy!
